Even if you go for the initial plunging attack, unless you choose to pummel it with black firebombs, this first battle can be a real pain in the ass. Fighting the Taurus Demon in DS1 was more like laying siege against the Taurus Demon (especially with garbage starting weapons and armor). I think low health in early bosses is a good decision though.

When I fought the Looking Glass Knight, I played it safe waiting for a nice wide opening to try attacking. Some late game bosses are shockingly fragile too. Having almost immediate access to MacDuff and his infusions was nice though, and the Pursuer is laughably easy if you summon a phantom thanks to the ballista in the boss room. Since I'd also used my only 2 Fragrant Branches of Yore at that point on the last Things Betwixt fog wall and Rosabeth of Melfia, I couldn't even open the way to the Ruin Sentinels, so for a while I thought my only option was to keep trying to fight my way through the invisible hunters of Shaded Woods. I assumed some other event would open that passage after I progressed through the game a bit. I didn't even realise Tower of Flame existed because somehow I completely missed the pull-chain that opens the gate in the tunnel between Majula and Heide's.
